Mama’s Rubbed Pork Loin

This recipe is always a big hit with guests at my house.

I have served it for birthday parties, or just for a simple get-together.

What I like about it, is you can cook the pork loin in a dutch oven or on the grill.

Either way, it comes out tender, juicy, and tasting wonderful.

Mama’s Barbecue Rub

What you will need:

½ cup coarse salt

½ cup Natural Turbinado Sugar Crystals

1/4 cup firmly packed brown sugar

1 tablespoon granulated garlic

1 tablespoon granulated onion

2 tablespoons freshly ground black pepper

2 tablespoons chili powder

1 teaspoons cayenne

1 teaspoon Chipotle Powder

2 tablespoons paprika

1 tablespoon ground cumin

Combine all above ingredients in a canning jar, put on the lid and shake it all together.

The Pork Loin

What you will need:

1 (3 1/2 to 4 1/2-pound) boneless pork loin

Mama’s Barbecue Rub

1-2 cups beef stock

Now, lets put it together:

In dutch oven:

Heat your dutch oven over medium heat.  Sprinkle some of Mama’s Barbecue Rub on your pork loin and simply rub it into the meat.  Place the pork loin in dutch oven and brown on all sides.  Add 1 cup of beef stock to the pan, cover and allow to cook for 1-2 hours (adding more beef stock as needed).  Pork is done when its internal temperature reaches 170 degrees F (medium-well).  Let rest for 15 minutes before slicing.

On the grill:

Set up your charcoal grill for indirect grilling, positioning the hot coals on each side of the grill leaving the center empty.  Place the pork tender loin in the center of the grill above the empty part.

Close lid, cook for approximately 15 minutes on each side.  Pork is done when its internal temperature reaches 170 degrees F (medium-well).  Let pork rest for 15 minutes before slicing.

This rub is also delicious on chicken.
