What to do with Leftover Turkey-Turkey Enchiladas

Turkey Enchiladas is an easy turkey recipe!

Now that I have roasted a whole 20 pound turkey and served it to an 8 person family,  I have about half of it left.  What on earth do I do with it?  Well, I have a recipe to share with you that is delicious, that your family will love.

Turkey Enchiladas, this recipe is cheesy and has lots of flavor.

Turkey Enchiladas

Ingredients for Turkey Enchiladas:

2 tablespoons butter

1/2 medium onion, chopped

2 garlic cloves, minced

1/4 cup chopped green chiles

1/2 cup dairy sour cream and sour cream for serving

10 3/4 ounce can condensed cream of chicken soup

1/2 cup chopped ripe olives

1 1/2 cups cubed, cooked turkey

4 ounces (1 cup) shredded cheddar cheese

1/4 cup canola oil

8 flour tortillas

1/4 cup milk

Instructions for Turkey Enchiladas:

Heat oven to 350 degrees F.  In a medium sauce pan, melt butter.  Add the onion and garlic and saute until tender. Stir in chilies, sour cream, soup, and half  the ripe olives; mix well.  Reserve 3/4 cup sauce; set aside.  To remaining sauce, add 1/2 cup of the cheese; mix well.

In a medium skillet
, heat oil.  Then, lightly fry the tortillas on each side to soften.

Fill tortillas with the turkey sauce mixture, fold in the ends and roll up.  Place seam side down in an ungreased 2-quart casserole dish .

In a small bowl, combine reserved 3/4 cup of sauce and milk; spoon over filled tortillas.

Bake at 350 degrees F for 30 minutes or until bubbly.  Top with remaining cheddar cheese, place back in to oven for 5 more minutes to melt the cheese.

To serve, top with remaining olives and sour cream.   Serves 6-8

My family really liked this dish.  They didn’t even consider it  ‘leftovers’.
