Mama’s Beef and Noodles

Beef and Noodles

Beef and Noodles is an easy recipe that I always have the ingredients in my pantry for.

There are three fresh ingredients I use at the beginning of a lot of my dishes; carrots, onions, and garlic. This combo smells so good while it is cooking, it’s hard to wait until it’s done.

It is worth the wait though, because  it’s warm, tasty and delicious. I serve it with a fresh chefs salad, and maybe warm homemade bread.

Ingredients for Beef and Noodles:

2 tablespoons olive oil

4 large carrots, chopped

1 medium onion, chopped

5 garlic cloves, minced  (I use my food chopper)

1 – 28 ounce canned beef

2 – 32 ounce boxes beef broth

Salt and Pepper to taste

2 – 12 ounce bags of egg noodles

Instructions for Beef and Noodles:

In your large stock pot or dutch oven, add olive oil and heat over medium heat, til just warm.  Then, add carrots and onions and saute until carrots start to soften and onions are slightly translucent.  Next, add the garlic, saute until tender.

Add the canned beef and break it apart in the pan with a spatula or spoon, while combining it with the vegetables.  Then add the beef broth, salt, and pepper.

Last, when all the other ingredients are cooked through, add 3-4 cups of water (enough to fill the pan to about 3/4 full).   Add egg noodles, cook according to package instructions.

I love the kind of days you can light a fire in the fireplace or have a bonfire and put on a big pot of soup to simmer and enjoy all day long. It brings about memories of gatherings we had when I was a child, when we all gathered together to share a bowl of soup.

Mango fruit leather has turned out to be one of my kids' favorites. The sugar is totally optional, but it makes it much sweeter and cuts the tartness. The post Mango Fruit Leather appeared first on Mama’s Homestead.

Cream soda...do you like yours red or amber colored? I chose the amber colored version for my cream soda jelly. I like the flavor better. Plus, I added a teaspoon of vanilla, just for added vanilla goodness. The post Cream Soda Jelly appeared first on Mama’s Homestead.
