My husband loved this soft, chewy cookie. If you like them crispier, bake them longer.
Mama’s Spicy Ginger Crinkle Cookies Recipe:
3/4 cup shortening
1 cup packed pure cane brown sugar
1 egg
1/4 cup fancy molasses
1 tsp pure vanilla extract
2 cups all-purpose flour
2 tsp baking soda
2 tsp ground ginger
1 tsp cinnamon
1/2 tsp ground allspice or cloves
1/2 tsp sea salt
1/4 cup pure cane granulated sugar
Mama’s Spicy Ginger Crinkle Cookies Instructions:
Preheat oven to 350 degrees F.
In a large mixing bowl; beat shortening with brown sugar until fluffy. Then, beat in egg, molasses, and vanilla until smooth. In separate bowl, whisk together flour, baking soda, ginger, cinnamon, allspice, and salt; stir into molasses mixture a little at a time.
Roll dough into balls (about a tablespoon per ball). Roll in granulated sugar to coat and place about 2 inches apart on parchment paper-lined or greased cookie sheets.
Bake at 350 degrees F for about 9-11 minutes or until tops are crackled. Then, cool on a cooling rack.
This recipe makes about 46 delicious, spicy ginger cookies.
