Mama’s Rigatoni with Sausage and Vegetables

Mama’s Rigatoni with Sausage and Vegetables is a fast and easy recipe for when you are in a hurry.

I had 2 pounds of ground pork in the fridge that needed a home.  I put it in to a large bowl and mixed in some sea salt (1 teaspoon), ground black pepper (1/2 teaspoon) and rubbed sage (1 tablespoon).  This makes a simple, tasty pork sausage.

I then split the sausage in to 2- 1 pound portions.  I wrapped one pound and put it in to the freezer for later use.  The other, I used for the dish I am about to share with you.

Mama’s Rigatoni with Sausage and Vegetables

What you will need:

1 pound pork sausage

5 garlic cloves, minced

3 cipolline onions, or 1/2 medium yellow onion, chopped

1 medium green pepper, diced

1 medium tomato, diced

2 pounds Rigatoni pasts, cooked and drained

3 tablespoons olive oil

1/2 cup grated Parmesan Cheese

salt and pepper to taste

Now, lets put it together:

Brown the pork sausage over medium heat in a large skillet, add garlic cloves, onions, green peppers; cook until vegetables are tender.  Drain sausage grease.  Add medium tomato; cook another 2 minutes and remove from heat.

In a large serving bowl,  combine the pasta, sausage and vegetable mixture, Parmesan Cheese,  and olive oil.  Salt and pepper to taste.

I made it as a last minute dish to feed the kids in a hurry and served it with butter bread.  My kids piled on more Parmesan Cheese after they put it on their plate, they said it made it even better.  You be the judge.

Side Note:

Cipolline onions are sweet, flat shaped Italian pearl onions.  They can be cooked or eaten raw.  They are delicious in salads, sauces, and tossed with pasta.  I found them at my local grocery store.
